Shuck Portland intends to build on “sea” grass-roots efforts to help restore natural habitats for wild oyster reefs.
Oysters are filter feeders, cleaning up to 50 gallons of water a day, making them a vital part of keeping waterways clean. After the gold rush, the West Coast saw a rise in hydraulic mining, paper mills and population creating a concentration in coastal water pollutants and killing off wild oyster reefs. So, we're working with local organizations to reestablish them.
Through dinners, classes, parties and panel discussions, the festival invited diners, chefs, and producers who want to change by eating sustainable foods, supporting efforts of conservation, and by conveying the message of sustainability for the entire country to see. Join us.

An age-old celebration of the pig; Maialata is a workday and feast steeped in ancient Italian traditions in accordance with folklore and biodynamic practices.
In the small mountain towns of Northern Italy, winter months afford the natural refrigeration necessary to process an entire animal into sausages, salumi, prosciutti and ragù that will feed a family for the year to come. This process of butchering, salting and preserving animals is no small task. So, rural communities would come together in a central town and work all day to prepare their pigs with each others’ help. Later that night, the group would celebrate the successful day with a feast of the bounty and pay respect to the animals that provide their nourishment.
Cathy Whims and Rudy Marchesi, along with a little help from Dario Cecchini, have recreated this experience at the Oregon Maialata recurring for nearly a decade. The event welcomes over 100 attendees - including chefs, butchers, historians, friends and enthusiasts - to gather in the chilly winery and farm lands of Montinore Estate to learn butchery and cookery from each other.
In the morning, Dario Cecchini leads a porchetta butchery demonstration with the drama and individuality that only a world-famous personality like his can offer. Then, we all join together for an extraordinary lunch by The Nightwood Society made of unlimited meats, cheeses, vegetables, dips, spreads, pickles and the world-famous Nostrana salad.
Montinore Estate wine and Caffé Umbria coffee flow freely all day, as we make our way to hands-on workshops, and eventually into the cellar to dine in convivial fashion on the meats and sauces made during the day.

At the end of the day, sit together for unforgettable multi-course subterranean dinner in the wine cellar with masterfully prepared food from the day's production, presented by Cathy Whims’ team of chefs including Paolo Calamai of Burrasca, Rick Gencarelli of Grassa/Lardo, Rob Roy of Nostrana, Eric Bartle of Abbey Road Farm, and Sarah Schneider of The Nightwood Society. Dinner will be paired with yet more Montinore Estate wine.

To celebrate the the release of their Horseradish Vodka, Kachka’s teamed up with their Grand Avenue neighbors: Oso Market+Bar, Dig A Pony, Bit House Saloon and Slow Bar to host a Bloody Mary Bloc Party on May 1, 2016.
The event began at Kachka with a shot of chilled Horseradish Vodka, then on to four other bars for Bloody Marys and brunch bites, then attendees voted on who makes the “Best Bloody Mary on Grand.”

The Negroni Social is an annual costume gala for industry professionals and is the inspiration for Negroni Week. We're proud to be the roots behind this now internationally successful fundraising initiative presented by Imbibe Magazine and Campari®.
2017 broke a record for the fifth year in a row for Negroni Week, raising $537,000 for a range of charities around the world and bringing total donations to almost $1.5 million over the lifetime of the program. The 7th Negroni Social at Buckman Public House broke records itself. After a stiff competition of 58 cocktail submissions, we picked 12 winning bartenders to serve their variations as the featured cocktails for the night. At the "2017: A Future Odyssey" themed party, we hosted over 500 people and collectively served 1600 Negroni! Our charitable donation to Outside In will help provide health and wellness to homeless teens and marginalized youth in the Portland area.
For the third year, we worked with Beckham Estate (Sherwood, OR) to age more than 300 Negronis for the party’s welcome cocktail in amphorae, hand-made clay vessels crafted by Andrew Beckham at the vineyard. Douglas will be creating a classic negroni of Campari, Bulldog Gin and Cinzano 1757 sweet vermouth And, for the most exciting part - after the amphorae are filled with the cocktail, the vessel is buried underground to age for two months. When guests arrived at the Negroni Social, they were greeted by a bartender nestled between large amphorae and handed one of the aged subterranean cocktails.
The event benefited Outside In for the 7th year, a Portland non-profit organization that provides medical and mental health services and resources to homeless youth. To date, we have donated $15,000 to the cause, and we hope 2018 will be the best year yet.
The invite-only gala is free to attend, with guests buying Negroni ($10) as a way of raising funds for the cause. A recipe book featuring the 12 selected cocktails is also available for purchase ($10).
